Usage: octenyl succinic anhydride can be used to esterify starch to produce amphiphilic hydrocolloid, that is, octenyl succinic acid starch (OS starch). Octenyl succinic anhydride (OSA) modification affects the interaction between molecules on the outer surface of two starch grains by changing the molecular structure of the outer surface of the two starch grains.
